Pancit Habhab or Pancit Lucban is a version of pancit originating in the province of Quezon. This noodle dish may look like the traditional Pancit Canton, but some notable differences occur.
Pancit Habhab uses dried flour noodles known as "Lucban Miki". They are not the same noodles that are used in pancit canton; they also differ from the regular miki noodles that are rendered fresh and smoother in texture.
This is best eaten with vinegar. Some people put about a teaspoon of cane vinegar for every serving.
