Longganisa ar fresh or smoked sausage. Varying ratios of lean meat and fat is mixed with garlic, black pepper, salt (usually coarse sea salt), saltpeter, muscovado or brown sugar, and vinegar. Variants may add paprika, chili, anise liqueur, and other spices.
