Ssamjang (Korean: 쌈장) is a thick, spicy paste used with food wrapped in a leaf in Korean cuisine. The sauce is made of doenjang, gochujang, sesame oil, onion, garlic, green onions, and optionally brown sugar.
It is a thick, umami flavored, and spicy paste used as a dipping sauce when you make a wrap of grilled BBQ on a lettuce, perilla or steamed cabbage leaf.

Sunchang is a county in North Jeolla Province, South Korea. It is located in a mountainous region of the province. Sunchang's claim to fame is its red pepper paste, or gochujang, which is supposed to be distinct from other recipes.
